I stumbled across this recipe by Kristin of STUFT Mama (who I am going to pretend I am friends with, but we've never met or communicated...I just blog stalk her) while reading blogs about fit and healthy people in the middle of the night. She's kind of awesome, so I figured her recipes would probably be fairly awesome as well (she has cute twin boys and a not so cute semi-hairless cat...you've been warned). I also happen to love Coach's Oats and stocked up with several bags of pancake mix the last time I saw it at Costco.
Side rant: Why is it that without fail, when I find something I like at Costco, they stop carrying it shortly after I profess my love for said product? After we finished our very first bag of Coach's Oats pancake mix and put it back on the Costco list...they didn't have it anymore. Luckily, 6 (six!) months later it came back and we bought three bags in anticipation of another shortage. The same cannot curently be said for the dry cheese tortellini I found and love...
So, what does one do with 100lbs of Coach's Oats pankcake mix other than make pancakes? Kristin's post has four recipes to help you get through your stash :) The other night while I was trying to stay awake all night after a track workout and a run, I needed a midnight snack and the Microwave Muffin sounded like just the thing.
Coach’s Protein STUFT Microwave Muffin
serves 1
1/4 cup Coach’s Oats Multi-Grain Pancake Mix
1/2 cup egg substitute
1/2 cup pumpkin
1/4 teaspoon vanilla
cinnamon to taste
pumpkin pie spice to taste (optional)
sweetener packet
Directions:
Mix all ingredients in a small bowl.
Pour in mug sprayed with nonstick spray.
Microwave for 4-5 minutes.
Plop in a bowl.
Top with your favorite toppings.
I used two whole eggs and no sweetener. Mine cooked for 4:30 and was probably slightly overcooked. Beware that the thing starts to grow out of your mug, but it settles down after it cooks a little more. I was worried that I was going to have exploded muffin all over my microwave, but I did not.
I topped mine with Wild Squirrel Vanilla Espresso Almond Butter and a little bit of jelly. Yum! In the process of eating it, I have also come up with 10,000 variations to make. Ok, not quite that many, but close...I swear.
I plan to add this to my list of quick, filling, and tasty breakfasts...since I have to go back to eating breakfast next week when I start working day shift!
